Fruited French Toast **
(Serves 2)
1 ea Ripe banana
1/2 c Orange juice
1 tsp Vanilla
1 pinch Ground cinnamon
4 slice Whole wheat bread
Omitting the bread blend the remaining ingredient in a food processor or blender until smooth. Pour into a shallow pan or bowl.
Preheat a non-stick skillet or griddle over medium heat. Oil it lightly.
Place bread in the bowl containing the fruit mixture & turn gently several times until it is well coated.
Place in the skillet & drizzle with any leftover mixture.
Cook until lightly cooked on both sides
